{"id":1847,"date":"2020-12-02T11:07:56","date_gmt":"2020-12-02T09:07:56","guid":{"rendered":"http:\/\/delph-in-cook.fr\/?p=1847"},"modified":"2020-12-02T11:08:42","modified_gmt":"2020-12-02T09:08:42","slug":"reussir-ses-frites","status":"publish","type":"post","link":"https:\/\/delph-in-cook.fr\/?p=1847","title":{"rendered":"REUSSIR SES FRITES !"},"content":{"rendered":"\n<p>Pour des frites r\u00e9ussies c&rsquo;est tr\u00e8s simple.<br \/>Il faut juste choisir la bonne vari\u00e9t\u00e9 de pommes de terre, de choisir le bon corps gras, les bonnes temp\u00e9ratures et pour finir ne pas oublier les deux bains (friture en deux temps).<\/p>\n\n\n\n<p>Pour la vari\u00e9t\u00e9 de pommes de terre, celle qui \u00e0 ma\npr\u00e9f\u00e9rence c&rsquo;est la Bintje, mais les vari\u00e9t\u00e9s Agria, Caesar, Estima, Manon, Vitelotte\nfont tr\u00e8s bien le job.<\/p>\n\n\n\n<p>Pour le corps gras c&rsquo;est en fonction des go\u00fbts : Huile\nneutre (tournesol, colza, p\u00e9pin de raisin, ou une huile sp\u00e9ciale pour friture),\ngraisse de canard ou d&rsquo;oie, V\u00e9g\u00e9taline, ou blanc de b\u0153uf (typique du nord de la\nFrance et de la Belgique, mais tr\u00e8s mauvais pour la sant\u00e9)<\/p>\n\n\n\n<p>Pour les temp\u00e9ratures : <br \/>1 er bain entre 150\u00b0C et 160\u00b0C pendant 5 \u00e0 8 minutes, et un 2\u00e8me bain entre 180\u00b0C et 190\u00b0C pendant 2 \u00e0 3 minutes.<\/p>\n\n\n\n<p>Trois choses tr\u00e8s importantes :<\/p>\n\n\n\n<p>Ne surtout pas rincer les frites une fois coup\u00e9es. Il faut\nrincer les pommes de terre juste apr\u00e8s l&rsquo;\u00e9pluchage, les couper en frites et les\n\u00e9ponger l\u00e9g\u00e8rement dans un torchon. <br \/>\nNe pas mettre trop de frites lors du premier bain.
